What inverting an image actually does
The operation is simple enough to describe in one line of arithmetic, which is unusual for image editing. Understanding it explains both why negatives work and why an inverted photo of a person looks so strange.
The arithmetic
Every pixel holds three numbers between 0 and 255, one each for red, green and blue. Inverting subtracts each from 255, so 0 becomes 255 and 200 becomes 55.
That single subtraction is the whole effect. White turns black, blue turns orange, and mid-grey stays almost exactly where it was because 128 subtracted from 255 is 127.
Doing it twice returns the original image precisely. No information is lost, which is why inverted color images can be flipped back and forth with no degradation at all.
Why negatives are the classic case
Photographic film records light as its opposite. Bright areas of a scene expose the emulsion heavily and appear dark on the developed strip, which is where the word negative comes from.
Photograph an old negative on a lightbox and invert the image, and you recover the photograph it was always holding. Colour negatives also carry an orange cast from the film base, so after inverting you usually need to pull the temperature back with the saturation and contrast controls.

Greyscale is not desaturation
Dropping saturation to zero averages the channels. Converting to greyscale weights them, because human eyes are far more sensitive to green than to blue.
The standard weighting is roughly 21 percent red, 72 percent green and 7 percent blue, and it is what this tool uses. A red apple on green leaves turns to mush under a flat average and stays clearly separated under a weighted one.
Why an inverted face looks wrong
Skin tones invert to blue-green, which is a colour no face has ever been. Your visual system is heavily tuned to faces and reacts strongly to the mismatch.
